The function of the retort machine is to subject food to heating, heat preservation, and cooling within a closed environment. This process controls pathogenic bacteria within safe levels, prevents reproduction throughout the shelf life, and ensures nutritional components remain intact. The retort machine is composed of the pot body, pot cover, opening device, locking wedge, safety interlocking device, track, sterilization basket, steam nozzle, and several pipe orifices.
